Extraction Process Optimization and Antioxidant Properties in vitro of Polyphenol from Russula virescens

Abstract: This paper aims to optimize the extraction technology and study the antioxidant activity of polyphenols from Russula viresce.Polyphenols were extracted from Russula virescens with ethanol as extraction solvent by using ultrasonic extraction method. The optimum extraction condition of Russula virescens polyphenols was determined by single-factor and orthogonal test.The results showed that the optimum extraction conditions were obtained as follows: ethanol volume fraction 30%, solid-liquid ratio 1:40 (g/mL) and extraction time 50 min. Under these optimized conditions, the average extraction rate of polyphenols was 9.81mg/g. The hydroxyl radical and DPPH radical scavenging ratio with polyphenol concentration have notable positive correlation respectively. The experiment results showed that the Russula virescens polyphenol had good antioxidant properties.
