青头菌多酚的提取及体外抗氧化活性的研究

摘要: 为研究青头菌多酚的提取方法及抗氧化活性,以青头菌为原料,乙醇为溶剂,采用超声波辅助提取青头菌多酚,通过单因素和正交实验确定青头菌多酚的最佳提取方法,并测定抗氧化性.结果表明:多酚的最佳提取方案为乙醇体积分数30%、料液比1∶40、超声时间50 min,提取率可达到9.81mg/g.青头菌多酚对·OH、DPPH自由基的清除率与青头菌多酚的浓度呈正相关,浓度增加,清除率增加,青头菌多酚总还原能力与青头菌多酚的质量浓度的相关性好,说明青头菌多酚具有较好的抗氧化活性.

Abstract: This paper aims to optimize the extraction technology and study the antioxidant activity of polyphenols from Russula viresce.Polyphenols were extracted from Russula virescens with ethanol as extraction solvent by using ultrasonic extraction method. The optimum extraction condition of Russula virescens polyphenols was determined by single-factor and orthogonal test.The results showed that the optimum extraction conditions were obtained as follows: ethanol volume fraction 30%, solid-liquid ratio 1:40 (g/mL) and extraction time 50 min. Under these optimized conditions, the average extraction rate of polyphenols was 9.81mg/g. The hydroxyl radical and DPPH radical scavenging ratio with polyphenol concentration have notable positive correlation respectively. The experiment results showed that the Russula virescens polyphenol had good antioxidant properties.
